At Picasso’s, we hear a lot of great things about our pizza.  We take pride in coming up with creative, great-tasting pizza creations that appeal to many tastes. One of the biggest factors in making a great pizza is making sure you have the best type of cheese for your pizza. There are many different types of cheese suitable for a pizza, and each one can change the taste of your pizza.

We can’t give away all of our secrets to making our pizza, but in this blog, we’d like to guide you through some of the best types of cheese for your pizza that you can use.

Mozzarella cheese – this light and creamy cheese is a staple for most pizzas. Coming in both fresh and smoked varieties, both provide a distinct flavor, and can be combined with a variety of ingredients. However, fresh mozzarella is frequently known as the “go-to” cheese for pizza. If you’re making your own pizza at home, ALWAYS opt for the block of mozzarella instead of the pre-shredded bagged mozzarella – it’s creamier, melts better and has a bolder taste.

Usually used for sandwiches, many chefs are turning to provolone cheese because of its sweet flavor. Give it a try! It can also be used as a garnish or topping because of its dryness or “semi-hard” nature. Where provolone excels is its ability to melt well on top of a pie, giving that signature smoothness to every bite of pizza.

Parmigiano Reggiano gives pizza a bold, nutty taste that many people prefer as a staple on their pizza. Parmigiano Reggiano differs from its cousin, Parmesan, because it is aged longer than 9 months, which adds to the intensity of its flavor. Another cheese in the aged Italian category is Pecorino Romano. This type of cheese adds a piquant flavor because it uses sheep’s milk. The intense flavor of this should be only used with complementary flavors, and in sparing quantities.

One of the best qualities about pizza is its versatility – a pizza’s creativity is only limited by the chef’s imagination! We pride ourselves at Picasso’s on our creativity in serving you a pizza that’s delicious and unique – so we’ve had to get creative in our use of some cheese! However, when experimenting, the trick is to use complementary flavors. For example, feta may not be the optimal pairing atop a pizza that’s also topped with Canadian bacon – however, on our Parthenon pizza, the gyro meat, onions, tomatoes and garlic sauce makes the taste combination delicious!

Don’t be afraid to ty something new, especially at Picasso’s. Our chefs are especially trained to combine some old standby flavors with bold new ones, so no matter what you choose, you’re in for a treat.
